After a winter of smoking over 120 pounds of Canadian Bacon, Venison ham, fish and cheese, I figured it's time to try my first ever ribs. Got lucky and found 4, 3-1/2 - 4 pound racks at Walmart for $2.08/lb. I rubbed a bit of EVO and rubbed with McCormick Grill Mates, Smoke house maple. I know it's not homemade, but I had it in the cupboard. I figured for the first time KISS.

ready for the overnight rest.


4 hours into the smoke at 230 w/hickory pellets, beans on top. I might just pull this one off.


Still has to run a bit longer, but I'll post Q-views good or bad later.
 
Well, I'm thrilled at the way they turned out. 5 1/2 hours the bend test was perfect.



The ribs were tender and juicy. I had two different sauces but didn't use them. Everyone ate them naked and loved the flavor. I didn't get any plated pictures because the family grabbed them too fast. My 5yo Granddaughter said they were the most "Awesomest" thing she ever had. Requests for more ribs and pulled pork soon. I can't wait. I still have the other two racks in the freezer waiting their turn.

Looks delicious! Great job on your first ribs!  Color looks beautiful.  Now you'll end up like me and buy them whenever you get a good price and stock them in your freezer.  I have about 8 racks in there right now haha

Beans on top?!?!  How do you get meaty goodness dripping into them when they are on top?  lol

First time doing beans in the smoker. Still learning the game. Will be bottom beans next time. They were great with a nice smoke flavor. My wife isn't a smoked food nut like I am, but she loved the flavor.
Love this site. I've learned a lot by hanging out here.
 
Hey they are still going to be good  the smoke really kicks them up a notch
