That recipe is for a 3lb. brisket originally (never seen one that small haha)  Anyway...I usually multiply the recipe by 10 or 20 so that I have a bunch to put in a shaker.  Packs some pretty good heat so I like it best with a sweet sauce.

You have to have a business license. Or know someone who does who will be willing to get a card for you.
 
 
I have a Costco membership.  How do they compare?
I would say price wise.. for meat especially, the prices are much better but you have to buy in large quantities.  For example, at costco, you can buy whole rib eye or sliced into steaks.  At restaurant depot, they only have whole pieces of beef, pork, etc.  You would have to buy and make your own steaks or chops....which i don't mind.   Restaurant depot's meat section is like Disney World for someone who likes to smoke and cook.  The selection is amazing and I always find cuts that you can't find in costco or any supermarket.  One of my favorite things about my local restaurant depot is that all meats are sold in cryovacs, making the fridge life a little longer.  This is important to me because I have a meat buying addiction and don't always have room in the freezer right away haha.  The cryovac meat also works to my advantage because any time they receive a piece of meat and the cryovac breaks, they reduce it up to 50%.  I have gotten ribs for $1.00/pound, Certified Angus Choice brisket and whole beef short ribs for $2.25 a pound.  The other day I got a whole choice Rib Eye for $4.50/pound.
