Got this 10# Butt on sale for $1.49/lb. Followed Bearcarvers directions and final results were Tender and Tasty.

The MES and AMNPS makes for a great smoke.

Rubbed and into the frig for the night.


After 10 Hrs. with IT of 165 and ready to wrap with foil.


Details of the smoke.
Pork ButtCoat with seasoning and back in refrig. Overnight covered.Mustard base and mix or my rub

Probe with hand IT between 203 and 206 and felt like soft butter. Going to be good.

Finished in 14.5 total hrs. with a one hour rest. Bone pull free. Carving this up for the plate.

Money muscle is sliced and in the lower part of the picture. Talk about good. MMMMMMM


Hot potato salad and tomato for the meal.

I made the cuts in the fat cap to better hold and allow the seasoning to get into the meat.
