Greetings!

I am an experienced cook and novice smoker. I have been BBQ'ing and grilling for 40 years and only recently acquired my Masterbuilt 30" smoker (which I bought for 25.00 and repaired at little to no cost thanks to Masterbuilt customer service). I live in Norman OK and have grown accustomed to good BBQ but never quite acclimated to the price! I am hoping to feed my addiction at a more reasonable cost.

Also looking to see how I might incorporate the smoker into my other food addiction - Sous Vide. 

Oh, oh, oh... and I want to smoke fish too!!

Fauxmo, welcome to SMF!  The MES is probably the most widely used smoker there is due to ease of use.  Lots of folks here with similar equipment so any question you have can be answered, including smoked fish!

This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
