My names Matt, I'm from the central MA area. I'm new to smoking meats. My amazing fiancé bought me a Weber Smokey Mountain 18.5 for Christmas and we've been using it a bunch ever since. I've been looking through this site a lot since we started smoking meats (whenever i'm curious about something) and thought it was about time i created an account. Looking forward to learning more about the hobby. Since we started I've bought a ton of popular rubs to see which ones i liked so i can know what i'm looking for when i make my own. So far my challenges are achieving that "bite through" skin on chicken (even at high temps it seems chewy), getting the right texture on my ribs (I'm getting better), and now working on brisket...
