New to Smoking

My name is Todd Davidson. My wife and I live in the Blue Ridge Mountains of western North Carolina. My wife bought me the Master Built electric smoker about six months ago. ive been a cook for 30+ years. but I love this smoker. I am a fisherman and catch Bass, Trout, Catfish, Croppie , We like all fish. I am into experimenting with tastes and new things to smoke. I just did a Vidalia Onion. I cut the top off peeled the onion cut down to quarter the onion but not all the way thru. I then stuffed the onion with a bullion cube three pads of butter salt and pepper, wrapped it in tinfoil leaving to top open I put in a 1/4 cup beef stock and put it in with my pork butt for the last two hours off cooking... all I can say is, Give this a try it was mouth watering good. This is a great place to get ideas from and help if needed . Thank you for the site. Im a Vet US Army. Thank you to all who served..God Bless

This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
