Mrs Claus gave me a MES 30 for Xmas. Last weekend I did a few racks of ribs which came out great. Just now threw in 2 pork butts. Figured tomorrow morning they should be done. I usually get up at 4am so I am figure(ok hoping) some time between 4 and 8 they are done. Using hickory and the recipe from this site.I have the temp set at 250

Glad you're here and exercising that MES!  Sounds like a solid plan and they should turn out great.  I think you are well ahead of any need for luck.  Be sure to stop in over at Roll Call and say hello so folks can give you a proper welcome.
