Linda has been asking for them for a while, and I finally had time for a long smoke today.

I picked up a medium-sized slab but I had to be careful because the first two in the case had loose crackly cryovac sleeves - fail!

Cut in half and sprinkled with some old "cajun" rub made by a friend, nothing else. It has a bit of celery-seed aroma. Now to make the fire. And this morning's biscuits just for the heck of it.


A base of Stubbs charcoal, with some scrap honeysuckle as a starter. Now I wait for the CC to heat up, it was 150 and climbing last time i checked.


The conditions are perfect, sunny and warm  and almost perfectly calm. Flowers blooming, birds singing, etc.

One hour in at 275, so far so good. I'm not running the smoke deflector this time so it's hotter to the right. I'll just switch them side to side.

I like this Stubbs, it's a long steady burn.

 
Looking good......cant wait to see the result.  I had my plans cancelled for tonight so i grabbed some ribs to smoke. 
 
I preferred the Asian version but it was still based on a standard bbq sauce (sweet baby ray's)
