Newby from Mohawk Valley NY

I had a round Brinkman smoker for about 5 years, got rid of it for a Masterbuilt 20077515.  Have not really cooked anything big yet.  Tonight I'm going to cook a few shrimp and scallops.  Looking forward to doing some serious smoking  soon.  One question I have is it better to put the meat (i.e. beef roast, pork roast, chicken etc.) in an aluminum tray to make the clean up easier?
