Lazy man's ribs......

So for my memorial weekend smoke I've decided to do some St louis spares....They have them on sale at Publix for $2.49lb....Not a great deal but better than full price as far as I'm concerned. These are vey nice ribs....floppy as can be......the perfect start to tender juicy ribs.....


The lazy way involves my simple rubs, leaving the membrane on (it comes off quite simply when the ribs are done) and no foil smoking preference. 

One rubbed with salt, pepper, onion and garlic powder.....the other rubbed with creole seasoning....all wrapped up and ready to sit in the fridge over night.


Tomorrow they will sit on the WSM in TBS provided by pecan chunks (and Kingsford blue) for roughly 6-7 hours or until they pass the bend and/or toothpick test.

Sounds great! Going to be a whole lot of smokin' going on this weekend for sure! I'm firing up on Monday. Wings and shrimp? Still planning. Have fun with your smoke, David.
 
Sounds great! Not great sales on ribs here either but always better then full price. Can't wait to see the finished product.

I've still got 3 bags left from last years purchase b-one.....but that didn't stop me from buying 4 more bags yesterday

...and we're off.....Figured I'd might as well smoke a half pork loin too....It's a tight squeeze but they all fit just fine....I could use the bottom rack but if I can cram it all on the top I prefer that....


My cruise control all hooked up....Not gonna even look until it's time to check the loin which I assume is going to be done before the ribs.....

 
Pulled the loin @ 2.5 hours.....143 degrees......Didn't get a pic.....I wanted to get it wrapped up and in the cooler without losing much heat.
 
Worked like a charm.....It was a little windy today and I was worried that it might affect my smoker. But the BBQ Guru NanoQ held the WSM rock steady all day...........

It fell apart when I did the bend test. That's ok though, my family likes 'em fall off the bone too.

The above rack was done in 5 hours.....The other rack that isn't pictured took another hour because it was a very thick slab of ribs.

The family thinks it might be my best work......Which is great because they have the final say as to what's actually good or not
