MES 40 retrofit kit 20070311 Gen 1

Hi all,

 

I am going for my second smoke this weekend and have been reading that people were having issues with the wood not burning properly and not turning to ash. I haven't tested mine at lower smoking temps yet but I figured I would call Masterbuilt to get more info on the kit in case I do need it. They told me that only at levels about 200 degrees would the smoker produce smoke and they do not make the kit for my particular model 20070311.


Does anyone know if this is true?

What temperature are you trying to smoke at? Are you trying to cold smoke?

 

You may not need to adjust anything with your smoker. I have a Masterbuilt and I haven't had any issues with it at all. You can't really tell if you need to mod your smoker after one use. I would use it a few times before looking into any mods, unless it's a big malfunction such as equipment failure or something to that nature and if so I'm going to assume it new so the warranty should cover it. There could be other issues people are having with their smoker that they aren't telling the full story about. Sometimes the issues we have can be the result of simple human error.

Yep fully understand one smoke won't tell me anything. I was more just curious if this is even offered for my unit in case I do ever experience issues and per Masterbuilt reps it is not.

I understand. The goodthing I've noticed to far is Masterbuilt really stands behind their products in the event you do have an issue. Are you smoking anything this long weekend?

Rraczla, first off you've got a really good MES model. Yours is a cosmetically updated MES 40 Gen 1 with a few extra bells and whistles. There should be no problem with wood chips not turning to ash. All hot smoke recipes will call for cooking temps of 215-275°, depending on what's being smoked and what type of smoker is being used. Yes, you didn't make it clear if you were intending to cold smoke or not. For cold smoking, Masterbuilt sells a separate cold smoking unit that a lot of people like. I and many others prefer the A-MAZE-N Pellet Smoker because it works great for both hot and cold smoking, fits inside your smoker, and produce up to 11 hours of smoke with one wood pellet-filled tray.

 

For MES newbies, I also recommend using wood chips for your first few smokes, see how you like it, and if dissatisfied to look at other sources of wood smoke. I find using wood pellets is much easier and more effective than using wood chips.
