Working with chocolate, it's less about the cooking and more about the alchemy of foods.
Best chocolatier & confectioners in America awards 2012-2015, received for results in competitions taking place in San Francisco, Los Angeles, Seattle, Napa and Monterey.
Back in the 80's I was the BBQ Chief for the Delta Mountain Inn in Whistler B.C Canada..sounds impressive..!!
I grilled a couple of lunches pool side and did prep while I took in "The View" beside the pool/tennis court.
After the first grueling four hr's were over I would hang out in the Village (Whistler Olympics/Vancouver) for some refreshment
and then back for the evening shift..usually a steak BBQ for somewhere between 30 to 120 people.
Always cooked a few extra so the staff ate well..mmm..Tips..!!
