just kinda wondering how many on this forum are presently or former professional cooks, ? meaning got paid to BBQ and or have or had BBQ business's

Me too!

The only thing smoked on my current menu is spare ribs; next week we are going thru a menu change and the ribs are going off and being replaced by smoked and them sous vide pork belly.

maybe I should have  phrased the question better,  such as " how many here ( are or have been)  professional barbecuer"s  "..
 
   Back in the 80's I was the BBQ Chief for the Delta Mountain Inn in Whistler B.C Canada..sounds impressive..!!

I grilled a couple of lunches pool side and did prep while I took in "The View" beside the pool/tennis court.

After the first grueling four hr's were over I would hang out in the Village (Whistler Olympics/Vancouver) for some refreshment

and then back for the evening shift..usually a steak BBQ for somewhere between 30 to 120 people.

Always cooked a few extra so the staff ate well..mmm..Tips..!!
