Picked up a Prime Grade Packer this morning at the local Costco for this Memorial Day weekend. Couldn't believe the price. Should have bought ten, but my freezer is full. Going to try something different with this one. Saturday morning fire up the WSM, dry rub ala Franklin, take it to 160 with white oak, wrap in butcher paper, then take it to 180, flash cool in a cooler between two bags of ice. Sleep 8 hours with the Maverick turned off. Sunday morning finish in the oven at 350. Rest 1-2 hrs, slice and eat. Dinner at noon. Will this work? Sunday dinner is dependent on it working.
