Kind of last minute, spontaneous decision. Been craving some chicken so here we go!
All rubbed up and ready to go. I did a little prep work on the skin of the thighs trying to scrap off some of the fat and thin them out.
Onto the WSM - I finally feel really comfortable using this smoker.
Mmmmm, coming along now. Smoking at a temp between 280 and 300. Probably have another hour or so at this point. Straight up hickory and Stubbs natural.
