Kind of last minute, spontaneous decision. Been craving some chicken so here we go!

All rubbed up and ready to go. I did a little prep work on the skin of the thighs trying to scrap off some of the fat and thin them out.


Onto the WSM - I finally feel really comfortable using this smoker.



Mmmmm, coming along now. Smoking at a temp between 280 and 300. Probably have another hour or so at this point. Straight up hickory and Stubbs natural.


Adding some grilled veggies to the mix


Finished!









I'm full, happy and totally satisfied.

Thanks Farmer. Good night for sure. I've smoked something every weekend for like 6 straight weekends. Haha

Hi JRS,

Chicken takes on smoke fast so i smoked these between 280 and 300. This also helps to keep the skin crispy if you can... Still tricky to do even at high temps.

I think these took a couple hours. I smoke chicken to temp so i don't pay much attention to time. Chicken is tough to mess up so it's a good meat to smoke and practice with. We like our thighs abs legs between 165 & 170 IT.
