Good afternoon everyone,
I need some advice/assistance. I thought my weber thermometer was off, so I went and bought a wireless probe. I put it on today and temp is showing 200 on my weber, but 250 on the probe. I realize that the probe is metal, but not sure which one to trust. Oh and I have 3 racks of ribs for guests coming over in 3.5 hours.....
 
The best way to test your therms is check the temp in boiling water, depending on your elevation, it should be around 212*. Then check in a cup of ice water, it should be around 32*.

Consider the therm in the lid of the WSM a nice decoration...
 
Haha and what a nice decoration it is! I'm wondering if the probe isn't Hotter to because it's metal or because of the grates?

The probe should be at the same level as the food. If you don't have a probe clip just stick the probe thru a small potato and use that as your holder.
 
The thermometer in the lid of my WSM varies by as much as 30-60 degrees from a pair of digital thermometers($10 weber/Maverick dual probe), tested in the boiling/ice water as mentioned above.

Saying it is a nice decoration is giving credit where none is due.
