I got my new Weber Performer in Wednesday, finally replacing my 30 year old Weber which had about seen it's day the bottom had started to rust and I could operate the bottom vents any longer. Anyhow I did some loin CSR's this afternoon indirect with charcoal and hickory @ about 325 then seared them for about a minute per side IT was 155 after sear.

I've really had good luck with Weber products. This one is actually

my third kettle going back to the 70's
