Hey all,
Looking for a few tasty side dishes for a meal last Friday and since my Mac n' Cheese was a success the last time with the family I decided to repeat. But I also wanted to try something new, so I could not resist when my grocery cart passed some stuffer mushrooms on special last week. :)
Mac n' Cheese was the same as a post I shared last year (http://www.smokingmeatforums.com/t/164683/bacon-mac-cheese)
Now for the Mushrooms! So here's what I used;
- 10 Stuffing Mushrooms
- 5 Slices Bacon (Grilled & Chopped)
- 1 Clove Garlic
- 1/2 Cup Cheddar (Grated)
- 1 Tbsp Onion (Finely Chopped)
- 3 Tbsp Butter
- 4 oz Phili Cream Cheese (1/2 Pack)
Basically just blended everything (except for the cheddar) and stuffed them and then tossed a little cheddar over them;
Tossed them on the WSM for about an hour at 225 (Mac n' Cheese had already been on for about an hour by this point)...got them smoking on some plum and hickory:
Hours up and voila!
The Verdict....
Mac n' Cheese was fantastic once again...man I love that stuff!
Mushrooms...the taste was to die for...but I was disappointed with the way the looked.
I guess I should have smoked them for 45 minutes and only added the cheddar for the last 10 - 15 minutes.
Anyhow, the family was very happy and so was I...its great to keep learning!!
