Just wanted to say "hey" since I'm new to the forums.  I am also "sorta new" to the whole smoking thing.  I've had a cheap Menards Side Offset Smoker for a few years now, and it works pretty well for me after I made some mods I have seen here.  :)  Thanks for those by the way.


I haven't gotten too crazy with the meat - I've done a whole chicken, a turkey, chicken breasts, baby back ribs, spiral cut ham, burgers, etc.  My most recent smoke was an 8lb pork loin.  Because my smoker is a COS, it took a lot of my time making sure the temps stayed right, but I like futzing so it's all good.


I'm thinking about getting a Green Mountain smoker for Father's Day.  We'll see how that goes.  :)


Anyway, a big "Hello" to all of you!  And thanks for the help you've already given me!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Thanks guys!  Can't wait to try out some more things, the next "mod" I want to make to my COS is cutting a hole and adding a door to the non-firebox side to slide my A-MAZE-N pellet tube into.  Since I sealed up the chamber pretty well, it doesn't stay lit very long.


Any thoughts?  I have used wood in the side firebox but I'm not seasoned enough yet to prevent oversmoking.


It's pretty much only a matter of time before I invest in a proper pellet smoker so this is more of a science experiment.  And hopefully a stop gap until I upgrade.
