Cooked about 20-25 lbs of wings in the drum smoker for the fight yesterday so I figured i'd burn off some grease grilling up some lunch today. Had some loin CSR;'s to use up and they are great slow cooked.
I set up the BP to indirect cook and grill, only used 1/2 chimney which barely covers the bottom of the charcoal basket, dropped in a couple apple wood chunks. This set up giving it a little bottom air keeps about an automatic 250* around the perimiter then you can sear in the middle.
Perfect almost invisible smoke.
Ok now for the good stuff, came out nice and juicy...145 IT
