Off set smoker questions

You may also need to look at the elevation of your fire grate. IMO it should be about 4" above the bottom. You need good air flow under and through your wood. I also have a small damper at the upper part of my FB. This creates a good flow out of the FB into the CC. That's how mine is set up and it works great for me and the burns are very consistant. Thanks! I forgot to add that. I did 3.5" and it now works really really efficiently. To the point of complete burn with only white ash left it was amazing. I was stoked...pardon the pun.
