This is the color I've been working on for my chicken. Finally got it. Perfect dry rub I made up and injection and I didn't use a water pan. I just learn that a lot of people don't use water pan in there MES. I'm still a newbie so don't give me to much crap about not knowing that. I also made loaded potato wedges. This meal was amazing.

Excellent chicken!  I just scored a decent flat of chicken legs the other day and they will meet the smoker very soon!
 
I didn't smoker the taters. I've tried potatoes in the smoker before and they came out bitter both times. I think too much smoke. And I don't think they would've came out crispy. Not sure what I did wrong. I'm still a newbie though and willing to try again. So any advice would be more than welcomed. Maybe I could some potatoes part way through then to the oven to crisp. That way not too much smoke and would be crispy.
