In my humble opinion, pork shoulder cooked on my little smoker is the perfect meat!

All set to go
I'm working on getting potatoes the way we like them. I used to do them in the water pan, and we loved the result. But I started using sand in it. Smoker works better, but no longer have boiled taters. So I'm trying a shallow pan, full with enough water to cover them, on the bottom rack. We shall see.
Took a peek about 3 hours in.
Milo can't wait!
