Hi everyone. I picked up 16 pounds of beef short ribs yesterday. Im going to smoke them tomorrow. Never done the beef short ribs before. They are 4 slabs about 1-1.5" thick and they are about 7-8" long. I think im going to cook them as a whole slab instead of cutting them into individual ribs. Any thoughts on that?
I have been reading alot of threads on how to smoke them and it seems like most use the 3-2-1. For those who just smoke them straight through 6-7 hrs without wrapping, do they dry up at all and are they tender still? For those who wrap them do they start to fall apart like a pot roast can? looking for any advice or info you can offer.
