Need advice for self catered wedding

We are newbies to smoking, but absolutely love smoked tri tip and would love to serve it for our daughters wedding on the fourth of July. But we don't want to be smoking that day. Any advice? Can you do before and reheat without losing rareness?How?
 
I should mention that it's a big wedding: 350 people in our backyard.
 
I would not recommend tri-tip. The only way I have been able to reheat rare or med-rare meat and not cook it past what it was originally cooked to is to use my sous-vide machine and that is not practical to do for large groups (or any group over 5 people). If you really want to cook for that many people you might want to look for a meat that reheats well like pulled pork. 
 
350 people for your daughter's wedding?  I would definitely hire a caterer.  You can do Steamship rounds, BBQ, Tri Tips, etc. but don't self cater.  It is FAR too important a day for both you, your wife, and for her especially, and you will want to enjoy yourselves and all your guests!  Have a great time and enjoy it!
