After a long winter I'm getting back into the groove. Half of a loin butterflied and rolled up with portobello mushrooms and shredded cheese. Smoked @ 260ish till it hit 145*. Let sit tented with foil for a half hour. Tender and delicious as always. Served with salt potatoes and corn. ( for those of you not in Western NY Google salt potatoes and see what you've been missing. ). Enjoy!
