After a long winter I'm getting back into the groove. Half of a loin butterflied and rolled up with portobello mushrooms and shredded cheese. Smoked @ 260ish till it hit 145*. Let sit tented with foil for a half hour. Tender and delicious as always. Served with salt potatoes and corn. ( for those of you not in Western NY Google salt potatoes and see what you've been missing. ). Enjoy!

Great looking stuffed loin!  I looked up salt potatoes and will have to try them first when my wife is out of town because too much salt gives her problems.  She does love potatoes though.

Thanks guys. It was good again tonight. Bear I told my wife that I hadn't done one in a while that I better do a practice one before we have company over for Mother's Day. Lol. I think she fell for it.

Enjoy it while you can, she will catch on after a while. I try that and my wife "Right" and rolls her eyes. Got me figured out. I'm still banned from smoking, but thinking about doing some bologna so I'll have to fire up the smoker.  Hadn't told the wife yet, Maybe I'll just surprise her ????

I'm lucky, she enjoys 95% of what I put through the smoke.
