OK, I've heard of doing double smoked hams.........So here is my question.....

Because of a failure of my AMNPS, my 8 lb. picnic did not get much smoke at all...it came out moist and the bone just fell off. It just doesn't have much of a smoke flavor.
If I can get both ends of the AMNPS going, would it be acceptable to cold smoke the pulled pork for an hour or so?

Thx.

If you do this straight after it had come out of the smoker and was still hot, you could apply the smoke from the AMNPS without heat for up to 2 hours without a problem if it is going to be served and eaten straight away.

You have probably already allowed it cool though to pull, and it is already in the refrigerator. In this case you can re-smoke it just before serving. Place it spread out in an open tray in your smoker, with maybe a spray of apple juice for moisture, along with your AMNPS. Use the smoker to reheat the pulled pork until it has reached at least 165 F (74 C) before serving.

With either method food safety will not be an issue. Usually though when you reheat pulled pork you would do so with it covered in foil to retain moisture - so with the second method you need to make sure that it is not allowed to dry out.

Thanks for the help, guys. I'll have some tonight and let you know how it goes.........

Success! Got one side of the AMNPS going strong ( with a hair dryer), took some bbq out of the fridge and on to a foil pan and put it into the cold MES for about 15 minutes. It was great! Definitely added some hickory to my Q. Probable will leave it in for maybe 25 minutes tomorrow.

So my first picnic smoke came out great, all things considering. Just needs a little UMPH, before serving.

Thanks for the help guys.....

Glad it worked out
