Getting ready to toss a brisket on my WSM! Got some nice mini cherry splits an I'm to lazy to cut them down so have two in with the KBB. Planning to run 250 or less time to warm it up!

At least the beans are ready! Moved the therm and got a surprise 183*F IT. Was trying to let it ride but tossed some hot coals in to get it going.
 


Forgot the pic! Had an IT of 189 before I decided to check another spot thought I was close to wrapping this one but not so after all.
 
Okay, toothpick approved letting in nap in the cooler.
If you want to take up extra space in your cooler I suggest an old pillow,we recently got new ones so I tossed one in there works out great!
 


The smoke ring turned out well first part of the flat is slightly overdone but still moist. I tucked the thinnest part of the flat under, instead of cutting it off, and it turned out better than cutting it off and cooking the chunk separately. Looks like I'll have plenty of sammies and burnt ends this week!:drool

Looks amazing! I need to dive back in to brisket-my first and only one was so-so. When I see a nice brisket smoke, I'm inspired to give it another go! Thanks, David.

Thanks,here's some more inspiration burnt ends! Best batch of these yet let them cook longer than past attempts and bought a perforated grilling pan to cook them in.:yahoo:

Don't be freezing those things!! :rules:

They didn't last long so it wasn't necessary! Just don't want to eat them to often for sure or I'll need to come in the house via the sliding door!
