The smoke ring turned out well first part of the flat is slightly overdone but still moist. I tucked the thinnest part of the flat under, instead of cutting it off, and it turned out better than cutting it off and cooking the chunk separately. Looks like I'll have plenty of sammies and burnt ends this week!

Looks amazing! I need to dive back in to brisket-my first and only one was so-so. When I see a nice brisket smoke, I'm inspired to give it another go! Thanks, David.
Thanks,here's some more inspiration burnt ends! Best batch of these yet let them cook longer than past attempts and bought a perforated grilling pan to cook them in.
