So I steamed it up today...

My makeshift steamer:


Brought it up to 203 IT which was tricky since it was far from uniform thickness and the thicker part was probing at a higher IT than the thinner part.

Here is it:


Verdict: tasty, tender but on the dryer side. I saw this coming however because there was no fat cap really and it looked like it was a huge flat only. Not sure if theres any truth to it but really huge briskets come from older cows. Could I assume they are a bit tougher. This was a flat only and it was almost 9 pounds. Also said on the nutrional info that it's only 8 grams of a fat per serving which seems very low for a corned beef. either way, it won't go to waste and for the little I paid for it it will get thoroughly enjoyed by friends and family.
