Hi folks.  I'm from just south of Rochester, NY ( about 400 miles from New York City, in case you know know much about NY ) and have always been a griller, but recently went to a party where the side yard was filled with smokers, from ones the size of a 5 gallon bucket, to a couple the size of a landscape trailer.  Each owner there, was trying to out cook the others and it was great.  I ate so much that I had trouble climbing in the Jeep to go home.

So, I want to try this.  Life is slowing down a little, the kids all moved out, and I have a little more time.  I just got a good deal on a starter smoker, a Brinkman electric, and am having typical beginners' luck with it; some smokes turn out good, some ....eh, not quite.  But, I'm learning.

My next step is building a UDS and trying my hand at real smoking.  I'll be asking questions, so hang on!

Good afternoon and welcome to the forum, from a cloudy and rainy day here in East Texas. Lots of great people with tons of information on just about  everything.

Thanks for the welcome, Gary.  I've made many visits to Texas, and enjoyed them all.  I've managed to visit a few of the Papadeaux sites, always outstanding.
