This weekend I wanted to cook something fun and interesting for the Scouts, I decided on Schwenking. I wanted to do BB Ribs but at $3.98 a pound for ribs, no way, I'll never eat ribs again for that price, then I thought hey maybe some bonesucking wing, Wings were $2.57 a pound, you know where they can stick their wings.
Anyhow I checked out Drumsticks and they were $1.37 a pound IIRC and chicken breasts were $1.98 a pound, so I schemed after I saw a pineapple and grabbed the Drums, Chicken Breast, Pineapple, Thick Cut Ham, some Bacon, Rolls and a bottle of Roasted Pineapple Habanero sauce (currently working on a clone recipe).
I had all the food prepped and the Schwenker packed, my son Stephen got sick the day before we left and could not make it but I was committed and had to go whether or not I wanted to... Although, I wanted to go lol!
Using a Schwenker, is one of the best ways to get a great meal with a little smoke flavor by cooking over fire (direct flame) or hardwood coals, using a portable cooking device. Setup of the Scwenker takes about 2 minutes.
Swinging and spinning the Schwenker provides an even cooking area and less chance of burning foods.
For the fire I found the quickest way to get the fire going, is to start a base of hardwood, (thinner small pieces) in the pit, light a full chimney of charcoal or lump, preferably lump, empty the chimney of hot coals on top of the wood then toss my cooking wood on top, in about 45 minutes I'm ready to cook.
Cooking over a fire pit is awesome, you get incredible flavor from the smoke and by adjusting the grate up and down you can control the char or lack of.
For this particular cook, the bacon grease drips into the fire and sends up a nice flavor with the smoke and as the pineapple sweats it drips some of the juice onto the chicken below,.
The wonderful smell of the fire and drippings from the bacon as they whisp up in a puff of smoke kissing the food gently, the ambiance of the fire and the anticipation of an awesome meal, what a wonderful relaxing way to cook.
The drumsticks were cooked more on the low and slow side for a few hours then raised to the top level with the pineapple, while the chicken wraps were cooked.

Pineapple
- sides skinned and rubbed with brown sugar
- Chicken breast pounded then cut into smaller pieces
- Wrapped in thick cut ham
- wrapped in bacon
- Cooked over Oak and Maple
- flipped then coated with Roasted Pineapple Mango Habanero sauce
- Served as is or on dinner rill with a slice of pineapple
- Pounded and Cut into smaller pieces (center of Schwenker)
- Marinated in Light Soy Sauce
- coated in a store bought Bite Me Rub during cook.
