Ok, so, just finished putting together the fatties to sit in the fridge overnight.  Trying a couple different things this week...

1) Liberal dosage of Memphis Dust

2) Fattie #1 - Pepperoni sticks w/String Cheese (Made for easy rolling) - baste w/pizza sauce instead of bbq sauce...we'll see how that goes.

3) Fattie #2 - kielbasa and shredded cheese

Planning on throwing some wings in there too, but they're frozen and I won't be able to prep them until tomorrow morning.

Ok, so I forgot to take pics prior...bad me...I'm doing some wings later, so I'll post those before pics.  I'll certainly post after pics.

Once again, my propane smoker (the Masterbuilt 2 door) is running hot...I just can't get the heat down...we're about an hour or so into this and it's 246 and slowly climbing...if it evens off at 250, I think I'll be happy...or as happy as I'm going to be.  Interestingly, it just kicked down to 244, so if I'm in that 240-250 range (today), I think I can work with that.  I'm not overly concerned as I'm cooking to temp, but still... :)

Ugh...and now we're up to 279...and back down to 270...I'm freaking out a bit.  Internal temp is 142, so we've got some time before fatties are done.

And likely my final reply before Q-view... it's up to 304 at the lowest setting I can put my smoker at...correction, it just went to 320 and we've got 165 internal temp...taking them off...

Have you done any mods to your smoker yet? I hear everybody has issues with the chips catching fire in those and you have to use a cast iron pan in place of the stock chip tray. There are lots of posts about that mod on here.
 
Those look pretty tasty! I have the masterbuilt 2 door (gasser)as well, having the same problem as you since the days are getting warmer. I'm thinking of trying the needle valve mod (just type needle valve into the search bar, should come up) but couldn't find one in town. There is a link someone posted on where to get one on line. If you find a solution please post so I too can learn. Good luck, happy smoking!
