Thanks! It was at 163 for awhile (about an hour) so I'm not really sure it's been climbing slowly but steadily.

Thanks! That's the plan, gonna ride it out with no foil until 200 and then rest in a cooler for a few hours...there is no urgency over here! I will just panick when the beer runs out! Lol

Thank you! Will do!! I'll probably have a finished shot and a pic of when it's pulled! I have a tendency to take pictures of everything I make so I'll be right at home here!

Took 16 hrs, IT was 200 when I pulled from the smoker. What's left of the fat cap is at the bottom of the picture, it just slid off the meat while the cap was stuck on the grates.

I have it foiled and resting in the oven. I will pull apart in another hour but the smell in the house is killing me! I may need a midnight snack!!

I will have some pulled pics in the morning as long as I don't sleepwalk and polish it off before sun up!

Well I woke up at 8am with a massive headache after staying up for almost 24 hrs (I shredded at 3am) feels like I was hit by a truck! Guess I'm gettin' old

Thanks Bear! It was heavenly!! You're just a little south of Allentown, right? You could be here before the PP comes up to temp in the crock pot!! Lol

I made SoFlaQuer''s finishing sauce last night that I'm gonna have with mine. The wife's not a fan of vinegary sauces so I'll probably start makin a bbq sauce for her.

What a nice looking batch of pulled pork. For your first Butt I'd say you did a great job. Now that you have the first one under your belt and know what to expect the next one will be easier. As much as we all like pictures I would take one when it first goes in, then one at about 5 to 6 hours and the final one when you pull it out. Keeping the door closed, constant temp and making sure your temp gauge is accurate are all key factors.
