this is my smoker . I want to use it for smoking country style smoked sausage , but as you can see its propane and it really doesn't start smoking the wood  in the drawers ( picture with them pulled out )until it reaches about 225 degrees  will this still work  for smoking sausage ?




 
I would suggest that you get yourself a A-MAZE-N-SMOKER and cold smoke your sausage and then put the heat on and save your chip trays for hot smoking.  I just cold smoked some polish sticks for 4 hours and then turned on the heat until it was the correct internal temp. I have smoked plenty of sausage at 225 [polish, summer, ect] with no problem.  Reinhard.
