Found these on sale and figured why not. Did some creole butter injection and chef Tony's on the outside. Cherry chunks and the winn Dixie all natural briquettes. Hoping to find some more bags of that stuff before it disappears. $4 a bag for comparable quality to Stubbs is tough to beat...






Now just need to let the temp go back up and drink some beer to stay hydrated. It's hot down here! Summer came early!

Gonna be tasty!

We won't even put anything in the ground here for another month or two!

I actually planted the seeds in November. Had to bring them in a half dozen times over the winter when it got too chilly but they should be good to go soon. Not sure if anyone else is a hot sauce/pepper junky like I am but I'm amazed at the difference in the leaves between the habanero and the scotch bonnet. They're close cousins but the scotch leaves are at least quadruple the size of the habanero. Interesting...

Pit temp is up to 277 and smellin good. Vents are wide open.

So here's a question. They're pretty close but as you can see there's a few degrees difference between the two probes. I always let the low ball hit the safe temp before I pull the meat but it makes one think about using one probe. I know it's because of variations in the meat and placement but was just curious as to what others think.

 
Kind of anti climactic on the pics. Sorry. Had one too many "hydrating" beverages to care enough about the final plate presentation but it tastes great! Canned cranberry and "deluxe" Mac and cheese. It works!
