So with the nice weather and some friends coming over Sunday, wife asked me to throw some butts on the smoker. Well don't mind if I do.

Picked up two from my butcher. Threw the rub on around 3pm today, started smoking around 6pm (I want it done before noon tomorrow). She's been holding around 240 most of the night. It's 12:30am right now, so she's been on the smoker call it 6 hours. IT of 169 right now. I threw more coals on about an hour ago and now temps started to kick up past 285. So I closed down to inlets and put the 3rd on 1/2 open. MOST of the coals are white except a small top layer. So hopefully she stabilizes over the next hour or two so I can get some sleep...

All done. Finished around 8:30 this morning. Not bad. 14 1/2 hours. I actually should have pulled it at 190ish but I pulled them at 196... had my temp set for 198 for some reason. They came out good, SLIGHTLY tougher then usual but still tasty.

Here is one ready to come off (I picked a bit with a fork to taste it)

See that's the bad part about shredding this stuff. Fresh off the smoker it's the best and the bark never makes it into the container... I end up eating a lot of it :)
