Freezer is full and why not? Besides I will get even more enjoyment doing it again instead of dragging out leftovers.

So My first use was ham and eggs and biscuits this morning which took little or no thought.

But tonight, ham and spinach quiche....... ZOMG thats good stuff and soooooo rich!


Everyone can do quiche, if ya do want a recipe let me know.

Soooooooo............... What did you do a special sandwich?  Deviled Ham? Chowdar? Beans?
 
My leftover smoked ham is destined for a big pot of ham and veggie soup although quiche is a really good idea.
 
Ham and scalloped taters. Ham and Swiss on fresh onion rolls. Mrs will be making her ham salad...sort of a deviled ham spread. All good, all yummy.

Have one in the fridge right now I am probably going to smoke next week for dinner. Leftovers will go to sammiches, scalloped taters, and some navy bean soup.
 
Soup, beans, taters, sandwichs........ ya know we all got a lot to be thankful for!

I think we should all take a moment of silence in reverence to the man who invented stretch pants........
 
Ham Salad , I like mine on a real salad maybe in a tomato? Just not that time of year yet sooooooo........ its a deviled ham sammie!


Pretty good sammie, I remember the deviled ham being more of a red color course that was underwood deviled ham..... this is for real. AND with a bit of hot sauce and cayenne it makes it more snapy!

I don't quite the know the difference between deviled ham and ham salad so I built what I like. I guess mine is a spicy slightly peppery ham salad. Whatever ya call it, I like it.

I have consumed many a can of Underwood Deviled Ham, as we always have a can or 2 in the cabinet.

Do you have a recipe you could share, for your homemade Deviled Ham???

Deviled Ham Salad

All quantities are approximate, cooking unlike baking is extremely flexible.

3C left over ham (before grinding)

1C Celery (Finely chopped)

1/4C White Onion (finely chopped)

2T Creole Mustard

3 Boiled Jumbo Eggs (Chopped)

1/2C pickle relish (See notes)

Add Good Mayno to get your happy consistancy

Tony's Seasoning

Tabasco

McCormick Mustard Seeds

After I ground the ham and did all the chopping, I slapped my forehead and thought, "Well ya big dummy, ya coulda thrown it all in the meat grinder!"

I meant to use some pickled hot pepper medly I made for Muffalettas, but apparently its all been consumed. Tabasco's and Tony's worked well though.

I think I wouldn't like the celery and onion ground though.

Don't get carried away, it gets better sitting overnight.

I could have used slightly more mustard but there are those around here that don't like it.

::EDIT:: I had actually thought of using the honey ham snack stick recipe from Woodcutter. That would be totally awesome 'possum!
