So I am new to the thread and some what new to the smoking meat game. Usually pork loin or chicken on a kettle type grill. I just bought a charbroil 1280 offset smoker and need to do the tuner plate mod. I want to try all types of meatso fire away with any and all advice. I am from Wisconsin just north and east of Minneapolis

Welcome hole driller, I'm sure you will enjoy this site with all of the experienced folks who are always ready to share tips, ideas, recipes, etc. so, just ask away! I'm not a tuning plate guy, but I'm sure someone will be along soon that can help. There should be some info on the "offset side box" build site or any of several others.
