Figured It Was Time For Some Deer Jerky !!

Hey all, my kids have been asking me when we were gonna make some jerky.... Had some venison roasts in the freezer, so the other day we pulled them out to get started.....


Getting the roasts prepped !



Got the seasoning & cure on.... I used some Hi Mountain Cracked Pepper & Garlic mix on these !



In ziplocks & to the fridge for couple days !


Got most of them skewered & racked ! The rest went on my new Qmatz ! These things worked great ! (Thanks Todd)


In the smoker with apple wood at 150* to start ! Slowly bumped temp to 165* !


Couple hours in & lookin good ! Had to peek ! :biggrin:


Pulled, took bout 8 hours.... Taste tested by the fam & myself ! It passed.... has great flavor, pull & nice n' chewy !

Man oh man, my mouth is watering. Great job. I've got a venison roast in the freezer. After seeing this, I think I might thaw it here soon.

I seldom make Jerky----I usually use that same stuff for Venison Dried Beef.

However that is some Fantastic looking Deer Jerky!!
