Just purchased the MES 40 Bluetooth smoker and took the maiden voyage today with smoked salmon and a stick of jalapeno and cheese venison stick. Smoked 4 hours with cherrywood chips in the masterbuilt smoke generator and everything turned out perfect. My hats off to Bearcarver for his guidance into the MES world. Im normally a stickburner and he really cut the learning curve down alot. Thanks

Looks great. Bearcarver's the man alright. I bought a MES 30 Gen 1 because I thought I could produce smoked foods that tasted like they'd been smoked in stick burning smokers--and I was right. Maybe Myron Mixon might scoff at what I put on the table but while he's scoffing my family's scarfing all that food up--and theirs are the opinions I value most.

Thanks guys. No Bearcarver when trying new methods i usually dont "overproduce" until i know the final results. It turned out great though. I smoked a 5lb pork loin today for pulled pork and it was awesome as well. You can really produce the same results from an electric smoker to match the flavors of my stick burner!!!. Thanks again Bearcarver for cutting the learning curve. So far the Bluetooth MES has been a joy. The temps in the cabinet are steady and the temp probe is accurate. No complaints so far.

Thanks for those kind words, and I know exactly what you mean about first times. Could be salty or Dry or a lot of things.

I was just kidding you about such a small amount. I didn't always make 27 pounds of Canadian Bacon at once!!

Certainly no offense taken.lol After this weekend i wont be hesitant to do bigger batches!!.
