The past couple of weeks I've been doing pork butts and thoroughly enjoying eating them.

My wife and I decided we would do a Saturday smoke and take pulled pork to her folks' for Easter dinner.

I called her on the way home and said I was going to pick up a butt, and she said she already did.  When I got home, she had a picnic.

Should I do anything differently with the picnic vs. the butt?

Thanks in advance.

Not really. The picnic will have a little less fat but not enough to really notice the difference. Some people like to use picnics for sliced pork as it holds up a little better but I still take mine to around 200 and pull it. The picnics I get have the skin on which I remove prior to smoking. I also foil my picnics to capture the drippings so I can make a finishing sauce (they need it due to the lower fat content)

No diffrent other than what was stated. Comes from the same area of the pig, the butt is the shoulder and the picnic is the lower part aka the leg. I wrap mine when they hit 160ish and cook till 190-195 allow to rest beforw pulling.

They take a while for sure.  I'm still getting comfortable enough to get good sleep.  I feel like I have to have one eye open.

This is my first overnight smoke. First two day butts took 10.5 and 12 hours. I started this one at 7:45 tonight, so it should be done in time for our 9:30 am departure.

Good luck with it!

Thanks!

I went to bed last night around midnight after adding more fuel and turning the grate. Woke up at 5:30 this morning and both grill/meat were at 150*! Sometime over night the grill went out. I've got the pork in the oven now, and back on track. I think it cooked through the stall last night before the grill went out cause it's been steadily climbing since I put it in the oven.

I put them on at 9:00 pm and the smoker temp has been around 210 all night.
A man after my own heart.... I do 220 and come back tomorrow for the most delicious juicy butt and the bark's taste is only exceeded by that smokie fat cap. ZOMG!! Its worth a coronary! I understand that 20 hours of smoking it removes all the cholesteral from the meat.

Good to know that we are eating healthy
