Benefit BBQ: Boston Butt, Ham or mix ?

I am planning a BBQ Benefit for a family member who has been in hospital for over a month and was wanting ideas on what would be best way to procede as I have never cooked bbq for a crowd larger than 20 before. I have made bbq many times using Boston Butt and I have had other peoples bbq that used ham but have also heard of people using both and mixing them together. Any ideas or suggestion as I am looking to feed between 300 - 400 people.

When you say ham are you talking about an actual cured ham or just the leg section that is used to make ham?

That is a hard one as those are pretty different. Pulled pork is a good go to food for large crowds but to cook for up to 400 people would mean that you are starting with 125-150 lbs of meat and that could take a long time to cook unless you are set up with a large smoker. If you are thinking of smoking a store bought ham then that would definitely be quicker but not everyone likes smoked ham.

 

Hopefully some of the professionals on here can give some advice.

What do you have for a smoker? More specifically smokers. That is a heap of meat. You might look into cooking some whole hogs. like 2.

Pulled / chopped pork goes along way.  I am a member of a group here locally that does a lot of fundraisers.  If we can get brisket cheap (not anywhere right now) we use it, if not, we go with pulled pork  Easy to chop or pull, easy to reheat, dump the sauce to it (this helps stretch your meat too), 4 oz. portions on buns, chips and drink.  Sams or Costco have the chips for less than a quarter a bag, get drinks donated maybe.  Sell the lunches for $7, make some good profit.  Chicken leg quarters can be had pretty cheap too.  Just takes more room to cook.

Thankfully I have someone who is donating the meat as well as several pull behind cookers/smokers to use for this benefit so got that covered just need to figure out should we do all boston butts or a mix with ham.

Think about some cooking on Charcoal or Gas grills, a deep fryer french fries,chicken and don't forget a Donation Jar Good Luck & Prayers for your family
