Hi I am new to smoking and found this forum on the net so I thought I would check it out. I have a small barrel type smoker I got late last year, It’s spring and I’m ready to start it back up. I know there are a lot of differences between smoking and grilling, but right now I don’t know what they are. For instance what temperature should I have for a pork roast, how long is slow & low, and how do I keep wood blocks smoking and not catching on fire. In other words I know zilch right now, so I’m ready to start smoking 101.
