OK fellow smokers, i have a couple of  questions about smoking a ham and a turkey. First does anyone have recipes for a turkey or a ham. I will be smoking both of them at the same time, so what would be the best type of chips to use. also they are around 10-12 pounds a peace, so i'm looking for smoking times and tempartures. any information would help. i've smoked several things in the past and the family loved it, so i'm back for some ideas. 
 
here's one of my past turkeys.....I like apple wood for birds, cherry makes them slightly darker but a nice flavor. Allow some time, put drip pan underneath to catch drippings for gravy making...no stuffing in the bird. Them pics are a killer. makes me want to smoke one for myself before this weekend. thanks for some help
