Newbie Cheese Smoking Question

I apologize I posted this in the newbie section before I notice that there was a separate cheese smoking section so I am asking here.

I really want to smoke cheese but I was reading that the target temp seems to be under 90 degrees. When I seasoned the grill I tried to see if I could get smoke at that level and unless I cranked it up it would not smoke. Am I doing something wrong? I am using the Camp Chef Smoke Vault 18"
 
If you have a way to hook up a mailbox mod, or any type of smoke generator you will be able to smoke. Cheese will melt at the temps you need to get smoke using your smoker.
 
That is completely foreign to me. Are these accessories? Sorry for my lack of knowledge. I did post this in the cheese section after I relized there was a sub forum specifically for it.
