Hello all,

Tony here from the western part of MA. Been reading on here for the last month or so non stop, figured I'd register and say hi. Pulled the trigger on an MES 30 about 3 weeks ago and have used it twice since then. Thanks to all of you and your advice, suggestions, pointers, and recipes. My main reason to get into smoking is my sausage making, been doing it for about 3-4 years now, and make about 50lbs a year. Figured its time to learn how to smoke it too. Dying to get this down pat so I can attempt my first choiriças (Portuguese sausage); should of paid more attention as a kid when my mother made it.
