Brining Poultry

I'm kind of sad that I didn't discover brining poultry until i was in my 50s...

I never liked white meat (turkey or chicken) before.

I would have to agree. I've tried for years to get some flavor into some yard bird and have found just recently that brining is the only to get it there. Have even tired injecting and I prefer brining over that!

I'm already thinking about different flavors to add to the brine for the next one!
