Hello all!  Been making venison snack sticks and summer sausage for the past few years and finishing them in the oven.  Good, but...  FINALLY will be getting a smoker to "do it right".  Ordered a MES30 today to see what this is all about.  Can't wait to get it and see where I can go from here!  Lots to learn but it looks like I came to the right place.

Dartguy Welcome to SMF Use the search bar it is very good. Post questions and check out the MES Group section. I would also recommend gtting an AMNPS to use, it enables you to hot smoke or cold smoke without having to feed chips every 30 min. As for sausage here is an easy to make rack.

Tropics, thanks for the welcome and especially the sausage rack thread!  Will definitely make one!  And yes, I have been looking at the AMNPS and that looks like a winner, too.  A good thermometer is next.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

We are all smoke junkies here and we have to get our fix. If you have questions
