Leg Quarters for Chicken Salad

My wife's family is coming to our house for Easter and she wants to serve Smoked Chicken salad.  I'm going to smoke/cut/freeze the chicken today and make the chicken salad next Saturday.  

Ten pounds of leg quarters.


Loaded in my MES40.  I got a Maverick ET-733 this week so I'm using it for the first time today.


By the time its done I'll be ready for a cigar and cold drink.  The cart is my latest addition, it provides mobility and gets the smoker off the ground a bit.


I bought a potter's bench last week too.  It's come in handy for potting flowers and seed cups.



I'll mention one other new item for me, two new ceiling fans with remote control on the back porch.  The pull chains for the lights had gotten stuck and the wife wanted some with a little more style.  Without being able to turn on the lights I would sometimes have to resort to holding a mini-mag light in my mouth to remove meat from the smoker.

At what temp did you smoke your quarters at, and for how long? I like the idea smoking,then freezing so you can enjoy the company of your family.

Pulled chicken from smoker.  It didn't get as brown as it usually does.


Cut and vacuum packed.  Next Saturday we will make the chicken salad.  Easter morning we will stuff the salad in mini-croissants.

I had the smoker set for 275, once the IT hit 175 I turned the smoker down to around 200 for an hour or so.  I don't remember the total time;
 
Dang it sorry I am late but those sure did look good I will have to give it a try
