What's everyone's favorite wood to use?

I'm new to smoking and still have lots to learn. I am looking to see what types of wood everyone likes to use with what types of meat. I have used Apple wood with pork along with some hickory. This weekend I plan to smoke some chicken breast using some cherry. Bacon wrapped Coca-Cola chicken breast recipie by Myron Mixon is what I plan to use and figured cherry coke is good so I'll try cherry wood. Thanks in advance for your tips and advice. :grilling_smilie:
 
I like a bunch of different smokes, depending on the meat....
This is my personal preference on things....

Hickory - pork, beef

Apple- pork, beef, poultry

Pecan- pork, beef, poultry

Alder- pork, poultry, fish
 
I like Cherry, just haven't had any in a while, It will good with the chicken

I don't know if it's just me or what, but I like red and white oak the best. Not that I don't like hickory, mesquite, pecan, and fruit wood (especially cherry), but like bruno944 said, "...that's what BBQ smells like to me."
 
Apple, maple and hickory for the most part. I'm still burning some nice storm-felled sugar maple and I have bagged chunks of apple and hickory. Once and only once I saw a bag of cherry chunks and I should have grabbed it when I had the chance because it hasn't been back.

No pecan here. I'm not real crazy about oak, it seems kind of dark and strong, and not as sweetly aromatic as the other woods. I do use it for kindling.
